Rare Bird sighting: New rooftop bar opens in Cherry Creek
The bar: Rare Bird, 245 Columbine St., Denver
About: Denver’s newest rooftop bar sits on top of the 154-room Halcyon boutique hotel in Cherry Creek with skyline views, playful cocktails and light snacks. The cocktail lounge has a second location that opened in Nashville in May this year.
Who’s cooking: Executive Chef Daniel Young (unrelated to the private chef for the Denver Nuggets with the same name) previously launched the hotel’s all-American bistro and bar, Local Jones.
What’s on the menu: Rare Bird’s menu of snacks and light bites — like white cheddar truffle popcorn, wings with mango buffalo sauce and a Rare Bird Dog with coleslaw and Flaming Hot Cheetos — are perfect for happy hour or a quick bite before dinner. Soak up the views and sip on a Firebird with blanco tequila, grapefruit, spicy basil syrup, agave and soda or an Early Bird, a take on an espresso martini.
More: Rare Bird is hosting a Fourth of July party from June 30 to July 4 with live music and a classic BBQ menu, cocktails and unobstructed views of the city’s fireworks.
