From what has been shared so far, the next PS5 restock will happen on Wednesday, October 20, 2021.

The latest message posted on Twitter by PS5 Stock UK reads: “A few warehouses have received shipments of PS5’s, both Disc & Digital Editions, with the remaining warehouses expected to receive shipments by the end of this week. Sales to the public are expected around 20th October.”
As mentioned above, this remains a prediction, meaning that the dates and times could change to later in October, depending on the internal plans of Argos.
Both GAME and Amazon are expected to offer more PS5 stock in October, but no dates, times, or predictions have been made regarding when this will happen.
