Kid-friendly recipes: Easy jacket potato broccoli pie
Yet again, you’ve got no clue what to make for dinner.
Before you give in and load up a takeaway menu, how about a recipe that’s tasty, comforting, and requires minimal effort to make?
My jacket potato broccoli pie ticks all those boxes.
It’s a really quick meal that you can easily tweak to fit your and your kids’ preferences, whether that’s switching up the veg or adding some chicken.
Here’s how to make it.
Jacket potato broccoli pie recipe
Ingredients
- Large potato
- 3 floret broccoli )
- Spash of milk
- Knob of butter
- Handful of cheese (grated)
- Salt and pepper
Method
- Start by putting your potato in a microwaveable bowl with a lid. Make holes all over potato cover and put in the microwave for five minutes.
- Steam your broccoli and set aside.
- When the potato is ready, carefully open (beware of hot steam). Slice the top off the potato and scoop the inside out into a bowl, keeping the skin and a little potato intact to form a bowl.
- Add butter, milk, grated cheese and broccoli to the potato in the bowl. Season and mash.
- Scoop it all back into the potato skin and top with cheese.
- Bake in an oven for 10 minutes until the cheese is melted. Enjoy!
