Sunday has rolled around with scary speed, and – yet again – you’re stuck for what on earth to make the kids for dinner.

I’m here to help, with a simple recipe that ticks all the boxes.

My chicken pot pie is easy to make, requires just a few ingredients (and minimal faff), and pleases children and adults alike.

I made this for my son, Zac, for the first time and he was a huge fan.

It’s such a simple, cheat’s version of making a chicken pie using things that you likely already have at home.

The recipe below makes four medium pies. I had leftover mix, which I then used in a bigger pie with added shredded chicken, onions, and mushroom, which was even better.

How to make my simple chicken pot pie

Ingredients:

  • 1 sheet puff pastry
  • 1 can cream chicken soup
  • 1 cup grated cheddar
  • 1 cup of mixed frozen veg
  • 1 egg (egg wash)

Method:

  1. Start by mixing your soup, veggies and cheese together in a bowl and set aside.
  2. Take your puff pastry and cut out circles so there is an even number (one lid and one base for each pie). With the left over pastry I made little flowers for decoration.
  3. Place circles in a well greased cupcake/muffin tray and push down so no air pockets. Take a fork and make holes.
  4. Fill with pie mix and place another circle on top as a lid. Seal the edges with a fork and make holes with a knife so hot air can leave. Brush egg wash all over pies.
  5. Place in a hot oven for 20 minutes until cooked through and golden.
  6. Let cool slightly and remove from tray. Enjoy!
