Food experts predicts the biggest pancake trends of 2023 – and they’re wild

Pancake Day is coming up again on Tuesday 21 February, but you can forget about adding Nutella or lemon and sugar to your stack.

The cool kids will all be topping their pancakes with pasta sauce and katsu chicken, according to Ocado’s food expert, Laura Rowe.

The industry whizz has shared her predictions for the up and coming trends that’ll be big this year, based on the ingredients that are on everyone’s lips right now. And we have to say, they’re…unconventional.

Will you be giving any of them a go?

Cacio e pepe

Laura comes in hot with her first recommendation – a twist on a classic pasta topping.

‘This classic Roman sauce is buttery and affordably indulgent,’ she said, ‘and guaranteed to elevate any savoury crêpe.

‘To make the sauce, simply mix Pecorino Romano cheese, freshly crushed black peppercorns and butter together on a simmer before drizzling generously over your pancakes.’

Kefir and blueberry

Gut-friendly Kefir is a fermented food that’s, to quote a classic piece of cinema, so hot right now.

Laura said: ‘This smooth, yoghurt-style drink is packed with probiotics and makes a funky lighter alternative to whipped cream.

‘Why not add a spoonful or two to your pancake batter when whisking, and then dollop on top of your final stack with blueberries and a drizzle of maple syrup.’

Katsu chicken and kewpie mayo

Another savoury option, Laura thinks kewpie mayo is going to have a big boost in popularity this year.

She said: ‘Either drizzle it over the traditional Japanese savoury pancake, okonomiyaki, or stuff thin French crepes with oven-baked breadcrumbed chicken pieces dressed with Katsu sauce and finish with a smooth drizzle of Kewpie mayo.’

Miso, salted caramel and white chocolate

Salt and sweet is a flavour combination that famously goes well together, and miso adds an elevated twist.

‘Why not take a break from Nutella this year,’ Laura said, ‘and create the ultimate sweet-meets-umami pancake featuring the coolest combo for 2023 – miso caramel.

‘An Asian-fusion spin on salted caramel, whisk white miso into caramel sauce over a gentle heat before drizzling on top of American pancakes with melted white chocolate.’

Moringa and fig

This green superfood can add a great splash of colour to your pancakes.

Laura recommended: ‘Mix a spoonful of Moringa powder in with your regular batter, before cooking as usual, and topping your final cool green pancake stack with sliced figs and sprinkled granola.’
