Aloy Modern Thai opens new fast-casual spot in Capitol Hill

About: Aloy Thai Eatery is from the family that owns Aloy Thai Cuisine in Boulder and Aloy Modern Thai in Denver. The fast-casual spot differs from its sister restaurants because its focus is on quick service, delivery and takeout.

What’s on the menu: It includes the top 20 best-sellers from the other two restaurants, “optional customizable plates, and a lower price point,” the owners say. Examples are pad thai and drunken noodles, khao soi curry with slow-cooked chicken and crispy noodles, Thai green papaya salad with spicy garlic dressing, shrimp spring rolls and barbecue lemongrass chicken.

Who’s cooking: Chef Orathai Sikhumlek moved from Thailand’s Udon Thani province in 2014 and has more than 30 years of experience in the kitchen. She is part owner of the new location.

More: Owner Kim Naka grew up in Bangkok as one of 10 children, and later immigrated to the U.S. with her daughters, Arisa and Bo, in 2006. That same year, they opened Aloy Thai in Boulder. Naka’s business partner, Mui Fisher, also grew up in Thailand and was childhood friends with Arisa and Bo. She moved to Boulder in 2008 and joined the Aloy team.
